Have you ever notice when people convert to Islam their accent changes, there is definitely a muslim accent that seems to be universal, how comes?

I can only speak for the African American brothers; they still talk like their old ways except they like to use arab words when they can.

I feel myself getting an accent every time I speak to someone who has an accent. I don’t do it intentionally. Maybe, those people don’t either.

It's supposedly an empathy or social skills thing people develop innately. You may notice yourself just instinctively "dumbing down" your English or whatever language you're speaking when you run into someone who speaks it poorly, for example. Same phenomenon. We subtly mimic people sometimes, without even realizing it. It does, even if they're not aware of it, make people more comfortable when speaking to you or just at least makes it easier to understand one another.
