I've never seen a resume that included how many hours you've worked at a job. Are you sure you have to include that?

Also, never trust ChatGpt for complicated calculations. I used it for engineering homework a couple of times, it's always waaaay off.

use chat gpt, make sure you use the new model which is free for the first few tries.
My tip for you is to break it down. First find the amount of mondays, tuesdays and wednesdays between the first dates. This is easy, just find the weeks between and multiply by three. During this calculation u can subtract the PTO. Now here is where chatgpt comes in, you say 1-6 hours each day, but youre not certain the amount of hours. So you will ask chat gpt, take some of your total hours maybe 2000 since you need 600 on your last year. And ask it, give me a list of (how many days calculated) numbers between 1-6 repeating until they add up to be 2000 hours, you can also tell it in this prompt what were the most common hours you worked. 75% I worked either 2 or 4 hours. so it will weight towards those hours to make it more 'realistic.' Now im sure chatgpt wont give you the right answer the first time so just keep trying. It will most likely give it to you in a table which you can easily copy and paste. If you need the exact dates, thats easy aswell just give your calculated weeks and days aswell as your time range and IT should give you a list of dates.

Wow I just tried it for my self and even with the dumbing down of chatgpt this little thing gave me an entire file to use on spreedsheet.
