What is non-Horner African food?

I just noticed this....like what even is non-Horner African food?

From Rwanda to Burundi to Kenya to South Africa to Congo to Ghana to Nigeria to Mali to Niger....what is their food? All I know is jollof rice and fufu lol. But is that it? It's so strange. Madow food is really lack-lustre.

Lots of good food from West Africa and East Africa.

I love Egusi soup from Nigeria (Nigerians don’t know how to make meats though, you’ll be fighting for your life trying to eat it),

Thieboudjienne/Souppa from Senagambia,
I tried this nice Liberian dish (don’t remember the name but it’s made from Okra). Senegambia makes some fire fish dishes, really nice flavors.

Ugali/Mandazi and their stews in Kenya. Nyama Choma from Kenya is amazing. Swahili fish curry is fire.

I don’t know much about the rest, but majority of Africans make macaan stews.

I don't know a lot about it, I've only heard of fufu and egusi and jollof and the usual West African dishes, never got to try them myself.

Africa is an extremely diverse continent so I doubt that it's all "lackluster" but I don't exactly have the experience of trying food from across Africa to speak on this topic either.

Tried Congolese rice and it was delicious I also tried their own version of quraac which I liked. I honestly need to explore west and central African food.

i thought thieboudjienne was from Senegal.
