In the books, he was a nuanced character. Even though he had a reputation of iron will, we learn that he's amiable and open to reason. For example after the Battle of Blackwater, one of his advisers urged him to attack one of the bannermen who bent the knee to Joffrey but Davos counsels against it by being brutally honest to Stannis regarding loyalty. For his honesty, Davos became a lord then and there.
But the writers always hated him. The only time they portrayed that one the show was when they were setting him up to something that DIDN'T EVEN HAPPEN IN THE BOOKS. f*ck 'em.
