Shinsekai Yori is incredible. I’ve never seen another anime like it. I have to rewatch Higurashi since I didn’t know what was going on throughout it. If you want another anime that has a realistic depiction of romance, watch Honey and Clover. If you’re looking for another horror, try Shiki. You have a pretty great list though.

I've never heard of Honey and Clover, thanks for the recommendation. It has very good reviews on MyAnimeList (check it out btw, it's basically IMDB for anime)
Another anime I would recommend is Gankutsuou, I felt it was very underrated. It's the anime retelling of the Count of Monte Cristo.

No, I’ve never read a visual novel. I’d like to try it though. Do you have any recommendations of visual novels that have an anime adaptation? Also, doesn’t a VN take a lot longer to go through?

Steins Gate is one example of a VN with an anime adaption. They do take longer to go through, but the story has far more detail and the characters feel like real people

It's predecessor Rave Master it's wayyy better than Fairytail. You can tell Mashima took shit from that and one piece as well to make it. I saw the ending and it was shit af. How is Acnolognia getting defeated by MAGIC?!?!? Wasn't it made clear than magic doesn't work on him
