The Sphinx was covered by the sand and it’s well known, plenty of pictures showing the excavation done by the Brits. When you walk out those sites, you will notice how steep the ground is so what does that tells you?I think you only mean the pyramids, and apart from them, Egypt was filled with hundreds if not thousands of temples and artifices, from the average looking ones to the giants massive statues. The sphinx was always there, but not touched. So why the pyramid incident was the only one?

The Luxor Temple was covered with sand for many centuries. It was not discovered until 1883 during drainage works. Currently, it is one of the main tourist attractions of Egypt.[
Like many other monuments in Egypt, Karnak was covered by sand up until a century ago.
For thousands of years, the temple was buried under settlement debris, preserving the architectural and decorative elements until it was uncovered in the 1860s by French archaeologist Auguste Mariette who oversaw restoration of parts of the temple.

Luxor, Karnak and Horus temples were buried. Funny story, Muslims built Abu Haggaj mosque over the Luxor temple not knowing it was underneath until Europe discovered it.
